Dry Fly Distilling expects to begin production and open a tasting room this month in its new 24,000-square-foot facility at 1 N. Monroe, in the building formerly occupied by the Spokaesman Review press operations. Company President and founder Don Poffenroth says the distillery will have 35 employees when fully operational, up from the current production staff of 16, and production capacity will increase by 275%. Dry Fly plans to open a full-service restaurant, office, and event space later this summer.
